How to cook pizza with anchovies? First of all, prepare all the ingredients. Take flour of the highest grade. I recommend using extra virgin olive oil. Choose dry “quick-acting” yeast. Read about the different types of yeast at the end of the recipe.
The wheat flour should be sifted through a sieve. Add the yeast, sugar, a pinch of salt to the flour and stir with a fork (so that all the ingredients are evenly mixed into the flour). Divide the resulting mixture into two parts.
Mix the olive oil with the warm water. The temperature of the water should be 37-40 degrees. The water should be warm but not scalding or the yeast in it will die. Pour the oil and water into the flour part and start kneading the dough.
Knead the dough by gradually adding the prepared flour mixture until the dough is no longer sticky to your hands. Roll the dough into a ball, transfer to a dry bowl and cover with a clean cloth napkin. Leave the dough in a warm place for 40 minutes. Depending on the quality of the flour, you may need a little more or a little less.
Prepare the tomato sauce. I use an already prepared tomato base. To it, you need to add salt to taste and oil from the anchovy jar (anchovy oil will give the sauce a unique flavor). You can use olive oil and additionally add your favorite spices to the sauce. Stew the tomato sauce on medium heat for about 5-7 minutes, stirring occasionally. The sauce should thicken slightly.
Prepare the stuffing. Cut the olives into rings. Chop the artichokes, mozzarella and feta into small pieces. Grate the hard cheese on a fine grater. Set the oven to preheat at 190 degrees.
After the dough has risen, knead the dough. The dough should be elastic, stretch well and not stick to your hands. From the given amount of dough
Stretch the dough into a flatbread 5-7 mm thick. It is better to roll out with your hands rather than a rolling pin. I stretch immediately on a silicone mat greased with olive oil. You can use parchment, preferably siliconized. Read about types of parchment at the end of the recipe. The dough can be shaped to your taste (circle or oval).
Place anchovies on top (if anchovy fillets are long, cut them in half). Sprinkle with hard cheese. Let the pizza bake for 15-20 minutes. The exact cooking time depends on your oven and the thickness of the dough.
Garnish the anchovy pizza with finely chopped parsley and serve. Bon appetit!
